So we’d finished lunch and REALLY needed a sweet treat. I don’t like food waste and knew I’d got blueberries that needed eating, but these alone were not naughty enough.
So, I looked in the baking cupboard and discovered I had plain flour and golden caster sugar. In the fridge was butter and eggs, goody, I can work with this!
I’m an old fashioned baker and don’t really measure or weigh, so I go from sight and texture. I pretty much just ‘used up’ stuff, so should you wish to make my ‘Bluendies’ here’s what you’ll (approximately) need:
- 180g of cool(ish) melted butter
- 260g of golden caster sugar
- 2 eggs
- 150g of plain flour
- 150g of blueberries
Preheat your oven to around 180c.
Then pop some butter in the microwave for about 30 seconds so there’s enough heat to melt it down (but not sizzle and cook).
Mix in your golden caster sugar, then mix in your eggs one by one. Fold in the flour until you have a smooth batter, and stir in your blueberries. Takes 10 minutes with a small person, possibly 5 if alone, super quick and easy.
I then tipped this into a foil tray about 1.5cm deep and around 19cm x 30cm and cooked for 10 minutes, then a further 7.
We chomped on these still warm, and when storing the rest, there wasn’t much to put away… proves they’re scrumptious, enjoy!
